Thanksgiving has always been one of my favorite holidays. It means the weather’s cooling down and Christmas is just around the corner. Of course, the real reason I love Thanksgiving is because it’s a food holiday and I love to eat!
Now that I’m a vegan, I love creating new traditions- like celebrating Thanks-Living with friends where we eat giant plates of plant-based food and leave turkeys off the table! This 1-Bowl Vegan Cream Cheese Stuffed Cornbread is one of my absolute favorite recipes I’ve ever created. It’s a sweet, moist cornbread in perfectly wonderful muffin form with a mound of vegan cream cheese in the center. You’ll want to bake a double batch of these for your vegan Thanksgiving spread for sure!
This vegan, gluten-free mushroom gravy has SO MUCH FLAVOR y’all. That’s why I call it “Slap Yo Mama” gravy (don’t ask, it’s a Southern thing!)
