Christmas is almost here!
Pasha and I are ready to celebrate with family, friends, our beautiful baby girl, and of course, an incredible Vegan Christmas Dinner!

First up on our vegan Christmas dinner menu is Mushroom Walnut Bourguignon! Hearty mushrooms and walnuts in a rich red wine gravy on a bed of fluffy cauliflower mashed potatoes. This dish is always a hit!
This creamy winter soup has the most incredible flavor from the main ingredient, sunchokes, also called Jerusalem artichokes. They taste like sweet artichokes with the consistency of potatoes. You can usually find them in the produce section near other root vegetables. This soup is a MUST TRY, people!
Picture perfectly roasted butternut squash caramelized to perfection. Now pair it with stuffing made from tricolor quinoa, vegan sausage, mushrooms, fresh sage leaves, and cherries. Top it with a dollop of almond ricotta and you have the world’s most flavorful vegan side dish ever.
Lemony roasted asparagus topped with creamy vegan hollandaise. It’s the perfect holiday side for our vegan Christmas dinner- light, green, and so easy to prepare!
Ooey, gooey vegan chocolate lave cake that’s healthier than it looks! Need we say more?
