Superfood Dragonfruit Bowls

If you live in a warm climate where dragonfruit is still in season, hurry out to the store to pick a few up! They are a delicious, exotic little treat. A bit on the expensive side, but one large dragonfruit costs less than a cocktail, so why not indulge in something healthier?

This is a simple, easy to prepare breakfast or snack that is sure to satisfy your sweet tooth and leave you feeling light and energized.

Ingredients Needed: (clockwise from top left)

  • Coconut Oil
  • Hemp Seeds
  • 1 large Dragonfruit
  • 1 Banana
  • 1 cup Strawberries
  • 1/2 cup Pomegranate Seeds (optional)

Dragonfruit is one of my favorite late summer snacks! It has such an interesting texture on the outside. It’s a little squishy, almost like a succulent. Inside, the fruit is not too sweet and filled with hundreds of super good-for-you tiny black seeds. Sometimes you can find dragonfruit that is the most incredible shade of fuschia on the inside! Obviously I prefer that, but they only had the white variety at the store. Alas, my bowl won’t be hot pink. (But yours can be!)

Step One:

Peel the dragonfruit by making one slice, then using your hands to remove the outer skin. Pop the dragonfruit out and chop it into small chunks.

Step Two:

Divide the dragonfruit chunks into two bowls, then get to work slicing the strawberries and banana.

Step Three:

Rip open the pomegranate and remove the seeds, discarding the white skin. These little guys stain like crazy so be sure to wear an apron or dark clothing! Layer the sliced strawberries and bananas over the dragonfruit, dividing the mixture into two equal portions.

Step Four:

Sprinkle the seeds onto the top of the fruit bowls. Drizzle one tablespoon of melted coconut oil on top.

Step Five:

Add a generous sprinkle of hemp seeds on top and your Superfood Bowls are ready to enjoy! Also, please enjoy this photo of my cat, Helen. She is very squishy, like the outside of a dragonfruit.
