A Peek into the Recipe:

This decadent vegan cheesecake comes together with a few simple steps. Start by mixing ripe bananas into a creamy vegan cheesecake base made with dairy-free cream cheese and sweetened condensed oat milk. After baking, the cheesecake needs to chill for at least 4 hours to set perfectly.

When ready to serve, layer freshly sliced bananas between the cheesecake and a cloud of whipped oat cream for a beautiful presentation and an extra burst of banana flavor in every bite!

Tips for Success:

  • Ripe Bananas: The riper, the better! Slightly spotted bananas will give this cheesecake the perfect natural sweetness, but make sure they’re still firm.
  • Chilling is Key: Don’t skip the chilling step! Letting the cheesecake sit in the fridge allows it to firm up and develop even richer flavors.
  • Layer with Love: Make sure to layer the sliced bananas between the cheesecake and whipped cream for that perfect blend of textures and flavors.

Author: Carrots and Flowers
Recipe type: Dessert
Cuisine: Vegan, Southern-Inspired
Serves: 10 servings
Ingredients
  • Graham cracker pie crust
  • 16 oz vegan cream cheese
  • ¾ cup Nature’s Charm sweetened condensed oat milk
  • 2 tsp vanilla extract, divided
  • 4 tbsp cornstarch
  • 5 ripe bananas, divided
  • 1 can Nature’s Charm oat whipping cream, chilled overnight
  • 2 tbsp powdered sugar
Instructions
  1. Preheat the oven to 350 F. Mash three of the bananas. Set aside the other two.
  2. In a large mixing bowl, beat the softened vegan cream cheese with the sweetened condensed oat milk, corn starch and vanilla extract until smooth
  3. Add the mashed bananas, mixing gently until everything is combined.
  4. Pour the banana filling mixture into the crust. Spread into an even layer
  5. Bake at 350°F (175°C) for about 35-45 minutes, or until the center is just set and slightly wobbly. Gently turn the pie after 20 minutes so it cooks evenly.

  8. Top the cheesecake with sliced bananas in an even layer. Pipe or spread the whipped cream over the bananas.
  9. Slice, serve, and enjoy!
