- 16 oz silken tofu
- 1½ cups dark chocolate chips
- 1 tsp vanilla bean paste or extract
- ¼ cup Nature's Charm coconut whipping cream
- ¼ cup Nature's Charm sweetened condensed coconut milk
- 1 store bought graham crust
- 10 oz large vegan marshmallows
- Drain the tofu. Melt the chocolate chips in 30 second intervals in the microwave, stirring between until melted.
- Combine the drained tofu, whipping cream, condensed milk, melted chocolate, and vanilla paste in a blender. Blend until smooth. Transfer to the graham crust.
- Set in the freezer for 4-6 hours or overnight. Using kitchen scissors, cut the marshmallows in half. Place them on top of the chocolate mousse layer. Torch the marshmallows with a kitchen torch until charred and golden. You can also broil them for 2-4 minutes, watching closely so they don't overcook.
