Serves: 8 sliders
Ingredients
  • 16 oz vegan ground beef
  • 2 cloves garlic, minced
  • 2 green onion, finely sliced
  • 1 Tbsp soy or dark soy sauce
  • 1 can Chef's Choice coconut milk
  • 2 Tbsp Chef's Choice red curry paste
  • 2 small cucumbers, sliced
  • ¼ cup rice vinegar
  • 1 tsp sugar
  • 8 slider buns
  • 2 roma tomatoes
  • green leaf lettuce
Instructions
  1. Heat the rice vinegar with ½ cup water until very hot but not boiling. Add the sugar, mix well. Pour over the cucumbers. Toss well then place in the fridge.
  2. In a medium bowl, combine the vegan beef, garlic, green onion, and soy sauce. Mix well to combine. Shape the mixture into 8 round flat patties.
  3. Place a large, greased skillet over medium heat. Add the curry paste and coconut milk. Mash up the curry paste with a wooden spoon. Cook the curry for about three minutes, stirring often.
  4. Place the patties into the curry sauce. Cook for 3-4 minutes on each side. Spoon sauce over the patties as they cook.
  5. Build your sliders with green leaf lettuce, a tomato slice, and patty. Spoon a bit of curry sauce over the patties then place finish with the top bun. Add a long toothpick or skewer to make them a cute party appetizer.
