Heat the rice vinegar with ½ cup water until very hot but not boiling. Add the sugar, mix well. Pour over the cucumbers. Toss well then place in the fridge.
In a medium bowl, combine the vegan beef, garlic, green onion, and soy sauce. Mix well to combine. Shape the mixture into 8 round flat patties.
Place a large, greased skillet over medium heat. Add the curry paste and coconut milk. Mash up the curry paste with a wooden spoon. Cook the curry for about three minutes, stirring often.
Place the patties into the curry sauce. Cook for 3-4 minutes on each side. Spoon sauce over the patties as they cook.
Build your sliders with green leaf lettuce, a tomato slice, and patty. Spoon a bit of curry sauce over the patties then place finish with the top bun. Add a long toothpick or skewer to make them a cute party appetizer.
