Vegan Tom Kha Mac N Cheese

Ingredients
  • 1 whole roasted red pepper (1/4 cup)
  • 1 clove garlic
  • ½ tsp salt
  • ¼ tsp chili flakes
  • 1 can Chefs Choice coconut milk
  • 3 Tbsp Chefs Choice Tom Kha paste
  • 3 Tbsp nutritional yeast
  • 2 cups pasta shells
Instructions
  1. Cook the pasta according to package instructions.
  2. Combine the remaining ingredients into a blender. Blend until smooth, about 30 seconds.
  3. Preheat a saucepan over medium high heat for 1 minute. Add the red pepper mixture. Stir constantly for about 4-5 minutes, scraping the sides, until the sauce is thick. Add the pasta and mix well.
  4. Top with cilantro and more chili flakes and enjoy!
