¾ cup Nature’s Charm sweetened condensed oat milk
2 tsp vanilla extract, divided
4 tbsp cornstarch
5 ripe bananas, divided
1 can Nature’s Charm oat whipping cream, chilled overnight
2 tbsp powdered sugar
Instructions
Preheat the oven to 350 F. Mash three of the bananas. Set aside the other two.
In a large mixing bowl, beat the softened vegan cream cheese with the sweetened condensed oat milk, corn starch and vanilla extract until smooth
Add the mashed bananas, mixing gently until everything is combined.
Pour the banana filling mixture into the crust. Spread into an even layer
Bake at 350°F (175°C) for about 35-45 minutes, or until the center is just set and slightly wobbly. Gently turn the pie after 20 minutes so it cooks evenly.
Let the pie cool at room temperature, then refrigerate for at least 4 hours or overnight to allow it to firm up.
Slice the remaining bananas. In a chilled bowl, whip the oat whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
Top the cheesecake with sliced bananas in an even layer. Pipe or spread the whipped cream over the bananas.
Slice, serve, and enjoy!
