Magical, fluffy vegan rainbow pancakes topped with whipped coconut cream and salted caramel sauce. Perfect for brunch!

Ingredients
  • 3 cups flour
  • 2 cans Nature's Charm evaporated coconut milk
  • ¾ cup water
  • 6 Tbsp aquafaba
  • 3 Tbsp melted vegan butter
  • 3 Tbsp sugar
  • 3 tsp vanilla
  • 3 tsp baking powder
  • ¼ tsp sea salt
  • food dye
  • For serving
  • Nature's Charm whipped coconut cream, chilled
  • Nature's Charm vegan salted caramel sauce
Instructions
  1. Combine the flour, evaporated coconut milk, water, aquafaba, melted butter, sugar, vanilla, baking powder, and sea salt. Mix until just combined. Divide into 6 bowls, about a heaping cup each.
  2. Whisk the food dye into the pancake batter to your desired shade. Heat a griddle pan over medium heat. Grease with butter or oil.
  3. Use a ¼ measuring cup to portion the pancakes. Grease the pan between each batch. Try to keep the heat on the low side and (gently) flip the pancakes more often to keep the colors vibrant.
  4. Stack your gorgeous rainbow pancakes, top with whipped coconut cream, salted caramel sauce and enjoy!
