Melt 1 tbsp butter in a medium pot over medium high heat. Saute the garlic for 30 seconds until fragrant. Add the grits, evaporated coconut milk, broth, salt, pepper, and cheese. Stir well. Cover and reduce heat to medium low. Cook for 20 minutes, lifting the lid occasionally to stir well, scraping the bottom with a wooden spoon.
Drain the jackfruit confit. Slice the jackfruit into bite sized pieces. Coat each piece in cajun seasoning. Melt 1 tbsp butter In a saute pan over medium high heat. Cook the jackfruit for 1-2 minutes on each side.
Ladle the grits into serving bowls. Top with more cheese, cajun jackfruit, and chives. Serve right away.
