Place an oiled pan on medium heat. Add the jackfruit and sauce to the pan. Shred the jackfruit by mashing it with a fork or spatula. Cook and stir for about 8 minutes. Let cool so it doesn't melt the cream cheese.
Spread 2 Tbsp cream cheese over each tortilla. Divide the jackfruit into even layers over the cream cheese. Sprinkle with vegan cheddar then layer with spinach leaves. Roll up the tortillas tightly like a sushi roll. Cut into 1½" pieces. Arrange the rollups into a Christmas tree shape. Style with halved cherry tomatoes to make it look more festive.
